Soft Biscuit Production Line is a professional biscuit processing equipment, which can produce different kinds of soft & hard biscuits with hundreds of molds & process formulas. It is fully automatic from feeding, pressing, forming, baking, oil spraying to cooling and packaging.
During the baking process, starch granules are heated to above their gelatinisation temperature and they begin to swell. This gives the biscuits its characteristic texture.
Mixing
When you’re working with soft biscuits, low-gluten flour and plenty of oil are the key ingredients. Combined with the right machinery and equipment, you can produce these popular snacks that are crispy in texture and flavor.
The first step is mixing the ingredients in a large mixer. This ensures that all of the components are thoroughly combined. Next, the dough is shaped into different sizes and shapes. This can be done manually or with automated machinery.
The rotary molders used for hard biscuit production have many advantages, including quick mold changeovers and automatic belt tensioning. This allows you to switch from one shape to another without compromising product quality or performance. This is also a good choice for large-volume products that require high speed.
Forming
When heated the starch granules absorb a small amount of water and swell. This is known as gelatinisation and it contributes to the strength & rigidity of the biscuit. This process is slowed down by the high fat content, which competes with the starch for water.
Biscuits made from soft doughs have a different baking time, as they require the gluten strands to be less developed. Their softer texture is also the result of shorter mixing times, which prevents the development of the gluten web and therefore reduces the elasticity of the dough.
Once the biscuits are formed they are baked in large ovens. The temperature and duration of the baking are critical for the final product. Once cooked they are cooled on conveyors before being packaged.
Baking
Using wheat flour, sugar and oil as the main raw materials & adding bulking agents and other auxiliary materials. Shaped by cold powder process of powder mixing, rolling printing or punching & baking into mostly convex flowers. Including cream biscuits, scallion biscuits, sesame biscuits and meringue biscuits, etc.
The rotary molding machine produces a large variety of shapes. It uses an interchangeable die roll with engraved brass segments for product flexibility and quick production changeovers.
The cookies are then transported to cooling conveyors to cool them to a normal temperature. This ensures that the cookie doesn’t become soggy after packaging and it has a longer shelf life. In addition, special applicators are used to perform various functions such as sprinkling seeds & granules or spraying oils & flavors.
Cooling
Cooling the biscuits on the conveyor belt is essential to prevent bacteria growth and extend their shelf life. We offer a cooling unit that channels the biscuits to a stacker and keeps them neatly organized for easy transfer into packaging machines.
Soft dough biscuits have a lower flour content than hard biscuits, but they do contain a high amount of sugar, oil & egg. They are commonly made with rotary moulding equipment, which produces a variety of biscuit shapes such as digestive biscuits, shortbread & coconut biscuits.
Baking is carried out in tunnel ovens that are electric or gas and can be adjusted for different biscuit types. The deposited biscuits may be wire cut, extruded or deposited like cream sandwich biscuits. A special type of baking machine is available for co-extruded biscuits that are filled with a creme or fruit filling.
Packaging
Once the biscuits are baked, they are cooled on a conveyor belt and then packaged using automated packaging machinery. This is typically done using a flow wrap system or a carton box.
